Lauki Halwa  : Grated bottle gourd / lauki is cooked in ghee and milk. Caramelized  in sugar and decorated with dry fruits.

Lauki Halwa is made of Lauki or bottle gourd, yeah, the one which we use as vegetable and most of the people are not fond of eating it that way. Lauki Halwa may change that perception that lauki can never be tasty. THere are few recipes of bottle gourd / lauki to change this perception as lauki kofte curry, lauki pakoda, lauki raita, lauki chana dal and this one is Lauki halwa.

Bhindi Masala Curry

Bhindi Masala Curry Recipe | How to make Bhindi Masala Gravy | Bhindi Masala Sabzi

Bhindi Masala Curry  : Fried okra / bhindi is cooked in tomato and yogurt gravy.

Bhindi Masala Gravy is a semi gravy dish. It has a thick gravy of tomato and yogurt. Bhindi can be cooked dry and gravy both but mostly Bhindi is cooked as a dry side dish which is often served with chapati and raita. Bhindi Masala curry is served in mpost of the north indian restaurants.    

I have prepared Bhindi / Okra in different ways. Few recipes I have already posted on blog and few I shall be posting soon. Bhindi is one of my favorite vegetables and that is why I cook it often. Other Bhindi recipes are Bhindi Masala (Dry), Dahi Bhindi, Bharwa Bhindi, Besan ki Bhindi, Lahsuni Bhindi, Bhindi Do Pyaza, Kurkuri Bhindi, Bhindi Anardana and and many more.

Recipe Details : Bhindi Masala Curry

Ingredients for Bhindi Masala Gravy

  • Bhindi: 2 cup (bhindi pieces)
  • Mustard Seeds : 1 tsp
  • Salt : to taste
  • Asafoetida Powder : 1/4 tsp
  • Curry Leaves : 1 sprig
  • Whole Dry Red Chilli Powder : 2 -3
  • Coconut Powder : 2 tbsp
  • Oil : 1 tbsp

  • How to make Bhindi Masala Gravy

    Wash and dry bhindi. Cut into medium pieces. Heat oil in a pan and shallow fry bhindi. When bhindi is fried for 2 - 3 minutes or the outer skin of bhindi starts changing the color, turn the flames off and drain the excess oil from bhindi. Keep bhindi aside.

    Now heat oil in same pan. Throw cumin seeds. When cumin seeds crackle, add chopped onion.

    Fry onion till it starts turning light brown in color. Add ginger garlic paste, turmeric powder, coriander powder and  red chilli powder. Mix well and Cook till raw smell of spices and ginger garlic paste is gone. 

    Add chopped tomato. Cook till tomato is cooked completely and starts separating from the oil. Stir frequently. 

    Beat the yogurt in a bowl and add 1 cup water in it. Mix and pour it in the cooking pan. Stir till it comes to boil. When it boils, add salt.

    Add fried Bhindi in it. Cook on medium flames till gravy and bhindi start coming together. It takes around 5 - 7 minutes. Check frequently.

    Bhindi Masala Curry is ready. Serve it hot with roti / naan / paratha.
