Chettinad cuisine has very spicy and aromatic recipes. Chettinad Masala powder is specially prepared for chettinad curries. This spice powder is a mix of many spices. 

Chettinad spice powder is prepared using various whole spices. In this recipe, I have prepared chettinad spice powder which is later used to make chettinad gravy.
Chettinad spice powder can be prepared in large quantity and can be stored in air tight container for weeks. This chettinad gravy can be used to make various other versions of chettinad curries like egg chettinad, chicken chettinad, paneer chettinad, mix veg chettiand, mushroom chettinad etc.

Ingredients for Chettinad Spice Powder

  • Green Cardamom : 2
  • Black Peppercorn : 1 tsp
  • Cloves : 4 - 5
  • Cinnamon Stick : 1 inch
  • Whole Dry Red Chilli : 2 - 3
  • Cumin Seeds : 1 tsp
  • Fennel Seeds : 1 tsp
  • Coriander Powder : 2 tsp
  • Coconut Powder : 3 tbsp
  • Ingredients for Mushroom Chettinad



  • Mushroom : 200 gm (diced)
  • Onion : 1 (finely chopped)
  • Tomatoes : 2 (finely chopped)
  • Mustard Seeds : 1 tsp
  • Curry Leaves : 1 sprig
  • Turmeric Powder : 1/4 tsp
  • Salt to taste
  • Curry Leaves (fresh / dry) : 1 sprig
  • Garlic : 4 - 5 cloves (crushed)
  • Ginger : 1/2 inch (grated)
  • Kashmiri Red Chilli powder : 1/2 tsp
  • Oil : 1 tbsp
  • Chettiand Spice Paste : 1/2 cup

  • How to make Mushroom Chettinad



  • Dry roast all the ingredients listed under Chettinad Spice Powder.
  • Keep aside till completely cool.
  • In a grinder, add roasted spices. Add 2 tbsp water. Make paste.
  • Keep this spice paste aside.
  • Heat oil in a pan.
  • Leave mustard seeds in it. Let crackle.
  • Add chopped onion. Fry till golden.
  • Add ginger garlic paste. Cook till raw smell goes off.
  • Add turmeric powder and red chilli powder.
  • Add dried curry leaves.
  • Cook for a while.
  • Add chopped tomato. Add salt.
  • Cook till the tomato onion mix starts separating from oil.
  • Add chettinad spice paste in it.
  • Mix well and cook for a minute.
  • Add mushroom in it. Add water if required.
  • Cover the pan and cook for 4 - 5 minutes on low / medium flames.
  • Mushroom Chettinad is ready.
  • Serve hot with rice / chapati / naan / paratha.

    In a pan, dry roast green cardamom, cloves, peppercorn, red chilli and cinnamon stick. Add coriander seeds, cumin seeds, fennel seeds and roast it till get spicy aroma. Now add coconut powder in it. Roast all the ingredients till it is light brown in color.

    Now keep the roasted spices aside till it becomes cool enough. Grind all the roasted spices to make a paste. This chettinad spice paste will be used to make gravy.

    Now heat oil in a pan. Leave mustard seeds in it. Let the mustard seeds crackle.

    Add chopped onion in it. Fry till onion starts becoming golden in color. Add ginger garlic paste in it. Cook till raw smell of ginger and garlic is gone completley.

    Now add dry spices turmeric, red chilli  powder and dry curry leaves. Adding red chilli powder is optional as we have already added whole red chilli in roasted spices. If you want to have the spicy gravy add red chilli powder. I have added kashmiri red chilli which is not spicy but adds red color to the gravy.
    Also adding curry leaves is optional. If curry leaves are available, please add else curry leaves can be skipped.

    Now add chopped tomato and salt in it. Cook till tomato is completely mushy and starts separating from the oil. Now add chettinad spice paste in it. Mix well and cook further for 2 minutes on low / medium flames.

    Now add diced mushroom in it. Cover the pan and cook for 4 - 5 minutes on medium flames. Stir often to avoid sticking the gravy in the bottom of pan. Turn the flames off when mushroom is completely cooked.

    Mushroom Chettinad is ready. Serve it hot with chapati / paratha / naan / rice.
